  • How to have a healthy, happy summertime with your kids!

Hello friends, next Tuesday, 7/1/14 I will begin seeing patients at my new location at SageMED in the Factoria area of Bellevue, WA.  Please enjoy my newest blog post about how to have a healthy, happy summertime with your kids.

Summer is my favorite time of year, I especially love the heat! Even I get a little overheated sometimes, though so I make teas from naturally cooling herbs called refrigerants. These herbs include: Mints, Hibiscus, Lemongrass and Chickweed. A favorite mix of mine is Hibiscus with just a tiny bit of lemongrass and spearmint. Yum!

  • Grain Free Bread: Almond or Pecan

One of the things that we miss the most on the GAPS diet is bread. We have remedied this by making bread from various nuts. I don’t suggest eating tons and tons of this bread because it is expensive to make and too much of anything is not recommended but it is super delicious.

So I based my first recipe off of the recipe in the GAPS book by Dr Campbell McBride. The first loaf of bread I made came out really flat and kind of hard and bland. I actually ended up adding juiced pineapple to the batter before even making it, but it still was a bit off. I have made it four times since then and things have definitely improved.

First attempt: I believe the issue was not using enough eggs: I increased the recipe to 4 instead of 3 eggs.

1st attempt: I think the issue with the foamy liquid was that I did not melt the coconut oil but just tried to incorporate it into the batter.

Almond bread: 3rd or 4th attempt: it rose much more and the slices stayed together much better. No weird foamy stuff.

  • Personal Observations Thus Far

We are hanging out a stage 3 of the diet right now while I wait for the juicer I ordered from Amazon to make its appearance at our house. We are all very excited about the idea of fresh juice!
